Can a company find out what you have made in previous years?

Sure!  All they have to do is ask you to being in a recent pay stub or copy of your W-2.  Most employers will not release salary information to a prospective employer.  You can refuse to provide the information requested, but they prospective employer can also decline to hire you, too.
